Phoebus Levene, ca. 1930s

About 1913 Levene and his assistants began an extensive investigation of the composition of lipoids – compounds containing fatty acids – in the brain and other tissues, leading to better purification and classification of these substances. Levene had opened an attack, continued throughout his long career at the Institute, upon almost all the derivatives of fats, carbohydrates, and proteins then available for study. “So long as Life continues,” he once said, “the human mind will create mysteries and biochemistry will play a part in their solution.” (G.
